WB: Ryan Hardy's interim years pre-series but post-catching Joe Carroll (Following) - This seems a little confusing, as catching Joe Carroll is during canon; do you mean: WB: Ryan Hardy’s activities before Joe Carroll escapes from prison?
Ryan is the one who caught Joe 8 years before the show begins, and there's not a lot we know about that time period other than Ryan wrote a book and descended into alcoholism. It's a large period of time that I'm very curious about in-universe!
